When I was little, my dad started cracking my knuckles, so I feel I didn't really have a choice in the matter, but I'm not mad at him. I suppose it's one of my favorite daily "hobbies". As I got older, I just added more joints to crack.

RE: Finding new joints to crack or pop..
Ooh! Yes, I definitely get excited when I find a new, repeatable crack. It seems that as I get older, I find a new one every so often. Sometimes when I lay in bed at night, I name and count every joint I can crack.
I second your idea that a chart would be awesome!

RE: How do i crack my shoulder?
I crack my shoulders almost every morning. When I get up, I put both my arms straight up in the air, grabbing the wrist of my left arm and pulling slightly to the right. It usually only takes a second before it pops. Then repeat with the other arm. My shoulders crack very easily.

RE: The sacrum.
This is one of my favorite cracks. I've always referred to this as "cracking my b**t", but after reading these descriptions, I think it is my sacrum. I think, like many of my cracks, it happened by accident the first time. I do this often at work where I sit for many hours in front of the computer. When I feel one coming on, I slouch down in my chair, cross one ankle over the other, and squeeze my buttcheeks together until I hear the crack. I don't think I've ever experienced the "full" 3 cracks, though. I'm jealous.

I do this, too. I refer to this as "cracking my b**t". It's very satisfying. It usually happens when I'm sitting at my desk at work. I slouch down, stretch my legs out, and squeeze my b**t. I do sometimes, like some other joints as well, get the feeling that it needs to crack, but can't quite get it done. I don't think I've ever felt pain in this crack, though.
